Colorful descriptions are bound to accompany libations at the refreshingly unpretentious wine-centric dining spot Proof. The most happening venue in the city's most happening neighborhood, the Penn Quarter eatery features a spectacular 900-bottle wine list and a staff capable of guiding you through it.

Organized around small plates, the menu offers a charcuterie platter that conjures a smokehouse on a cold day and a cheese selection that ranges from buttery French Clisson to runny, pungent Affidelice. Entrées such as miso-glazed sablefish dissolve on the tongue, and a cherry-basted rabbit encourages diners to eat every last morsel. Throw in the dining room's exposed brick and an ultra-hip men's room, and you've got a memorable experience.

Things start off right with a charming and realistic champagne trolley, featuring vintages from $6 to one that's too pricey "if you have to ask."
